{Monthly Sweet Tooth} Baked Cheesecake Tartlettes

Hello friends! How was your weekend? I was out of action for most of the weekend but I did manage to check out the Old Mac Daddy caravans (there’ll be pics up on Thursday) and do some baking for my Monthly Sweet Tooth. So that’s pretty good! You don’t realise when you’re sick that everything is affected from your strength to your concentration. I’ll tell you a little secret, I even forgot to add the baking powder to the recipe! Somehow they still turned out well and were delicious!

Baked Cheesecake Tartlettes

500g low fat plain smooth cottage cheese
100g butter softened
150g white sugar
3 eggs
50g cake flour
½ tsp baking powder
½ tsp grated lemon zest

* Add all ingredients to a bowl and beat well
* Pour mixture into a muffin tray, makes 12 medium sized tartlettes
* Bake at 175°C for about 20min until just slightly golden on edges
* Allow to cool, decorate with whipped cream and fresh strawberries or any topping that takes your fancy!
As you can see this recipe is absolutely simple, fuss free and most importantly delicious! And a little healthier since it doesn’t have a crust. Definitely worth a try!

    actually i'm not sure what i love more about this post. the recipe that sounds fantastic. or the images that are so vibrant that i can almost smell these tartelettes. i'm in love with this swallow cups. where are they from? will make a couple of those tarts for mother's day! it's a MUST now that fresh strawberries are out.

    this is a great recipe – i tried them out and they came out delicious – i used cream cheese instead of cottage cheese cause woolworths has a special on and they were the same price and i made a chocolate ganache for on top – sooo very delicious. thanks for sharing 🙂 num num num

    Hey Lana! These sound amazing! Doing a combined 'boys welcome baby braai' for two sisters whose babies are due a week apart this weekend, think I might give these a bash! Do you think they would keep well if made the day before?!

    Yes, they'll definitely keep for a day or two, just add the topping at the end before you serve them!
