{Monthly Sweet Tooth} Chocolate cupcakes

Happy Monday friends! How did your weekends go? Mine was pretty busy but really fun, highlights were a trip to the Stellenbosch Slow Food market with friends and a walk up Lions Head totally surrounded by mist! Of course I also had to get baking for my Monthly Sweet Tooth post which I decided to style with a Valentine’s theme. Thanks to my sisters for all the extra props! I hope you like it, the cupcakes are seriously delicious…

Chocolate Cupcakes
100g cake flour
20g cocoa powder
140g caster sugar
1½ tsp baking powder
pinch of salt
40g softened butter
120ml milk
1 egg
½ tsp vanilla essence

* Mix flour, cocoa, sugar, baking powder, salt and butter together with electric mixer till it forms a fine granule-like consistency.
* Add milk, egg and vanilla essence to the dry mixture and beat till smooth.
* Spoon mixture into cupcake cases until ? full. Mixture makes about 12 cupcakes.
* Bake in pre-heated oven at 180?C for about 20 minutes or until sponge bounces back when touched.
* Leave to cool slightly before turning out onto wire rack to cool completely.
* When cool, either dust with icing sugar or ice with chocolate frosting. I opted to leave them plain as I wasn’t in the mood for any extra calories!;)
And lastly enjoy! As you can see this recipe is so simple and believe me, very tasty too, so it’s well worth it!
