These peanut butter and date balls make for a fabulous energy snack and are gluten free and packed with nutritious seeds. They are also so quick and easy to make and the beauty of a no-baking recipe is that you can taste as you go and create the perfect flavour balance. You can try adding cocoa nibs and experiment with other nut butters as well. Enjoy!

Peanut Butter and Date balls
1/2 cup desiccated coconut
1/2 cup coconut flakes
8 x large soft Medjool dates (pitted)
1/2 cup peanut butter (unsweetened)
1 tsp vanilla essence
1 tbsp chia seeds
30ml flax seeds
30ml sesame seeds
30ml sunflower seeds
30ml pumpkin seeds
1 tsp coconut oil, melted
Pinch of sea salt
* Mash the dates with a fork until soft
* Place all ingredients together in a bowl and mix well
* Use your hands to form a big ball with the mixture
* If the mixture is a bit too crumbly, you can add a bit more coconut oil or more dates
* Form small, compact balls with your hands
* Sprinkle Maldon sea salt over the date balls (optional)
* Store in a container in the fridge
* Makes about 18 small balls (depending on the size you make them)
