
Sunday was one of those real sweet tooth craving days and since I had a pumpkin sitting in my pantry and not much else, I decided to try my hand at making pumpkin flapjacks. I made the recipe up on the go and the flapjacks turned out so well. Needless to say the batch was devoured instantly! Hop down to see the recipe.

Pumpkin flapjacks

Ingredients
- 3 eggs
- 1/4 cup coconut milk
- 1/4 cup white sugar
- 1 cup cake flour
- 1 1/2 cup cooked pumpkin
- 1 1/2 tsp baking powder
- pinch salt
- * Spices to flavour
Instructions
- Beat eggs and milk together.
- Mash pumpkin and add to the mixture, along with all other ingredients.
- Beat well with a mixer.
- Heat some coconut oil in a pan, drop large spoonfuls of batter into the pan.
- Turn flapjacks over when you start to see bubbles appearing in the batter.
- Remove from pan when golden on each side.
- Serve immediately and add a topping of your choice.
Notes
- * I used a generous dash of ground cinnamon, ginger & nutmeg for flavour. Add your own spices as desired.
- Makes 10 - 12 medium sized flapjacks.
Topping ideas
- Keep it simple with butter and honey/ Try a dollop of full cream greek yogurt with maple syrup and walnuts / Or top with delicious Coconut whipped cream
