Delicious veggie dishes & curries to get you through winter

As I’ve been eating mostly plant-based lately I’ve had to introduce new dishes to my vocabulary which has been a rewarding experience. I’ve rounded up some delicious looking, hearty dishes and curries which are perfect for keeping us going through these cooler months. I’ve haven’t tried making any of these recipes yet but when I do, I’ll update this post with feedback. Enjoy and happy cooking…

VEGAN PALAK ‘PANEER’  

I’ve always wanted to try making a delicious palak paneer packed with spinach goodness and since I love tofu, I like the idea of this variation using tofu instead of paneer.

This nourishing Golden French lentil stew is bright and flavourful with turmeric and coriander, carrots and chard. The colour alone makes me want to whip this up straight away.
